SEATTLE, WASHINGTON — Adapt, pivot, survive.  These were the mantras of 2020, and 2021 is no different.  Local cafe in the downtown Seattle area has used this mindset to keep business flowing during the historic heat wave this summer.

“Table for 2 at 8pm, would you like to reserve the walk-in cooler this evening?” the host was heard while answering the phone this afternoon.  “Great, we’ll see you tonight for the chef’s 7 course ice tasting.”
